From Walton Brook Vineyard, Leicestershire
Harvested 24/09/2018, potential alc. 13.15%, pH 2.9, TA 9.98.
Crushed and destemmed, then pressed in hydraulic basket press. Fermented with Laffort VL1 yeast, to express fruit flavours from terpenes at 16°C Fermentation took 16 days.
It was racked three times to settle out the yeast lees and filtered and bottled on 16th January 2019.
Final alc. 12%
The Solaris is off dry, it initially has stone fruit flavours, then a little sweetness then a lovely zing at the finish
No animal products are used in production. 12% Alcohol by volume. 6 x 750ml bottle.
