November was much less frenetic than October with the winemaking, but also incredibly important. It saw us racking (moving to another tank) all the finished wine off their gross yeast lees (gross as in large not as in minging!) so the fine lees can begin to settle and cold stabilisation can start (more on that next month).
I’m really pleased with how the wines are shaping up, the Bacchuses from Hampshire and Leicestershire have subtle differences in their flavours and the reds will soon be ready to go into the barrels for a few months.
Racking is also a time when we notice the beauty in the wine as we get some quite beautiful patterns appearing in unexpected ways, like the surface of the wine or in the lees.
The Seyval Blanc finally started to ferment and is now finished, we had a slow start because it was a bit chilly for it. When it was almost finished we decided to experiment by making 10 bottles of Pet Nat (Pétillant Naturel), which is a method of making semi-sparkling wine by allowing the final stages of fermentation to happen in the bottle and so trapping the carbon dioxide produced.

Artist and designer, based in the North East, Corinne, distinctly uses her creative skills to create beautiful gifts inspired by the British Isles. With the boxes handmade in Newcastle and laser-etched in nearby Blaydon, our wooden gift boxes make the perfect present for the upcoming festive season. Find inside a duo of our Maximilian and This Mortal Angel, or swap one out for a gorgeously festive bottle of Sloe & Hawthorn Gin made by our friends at Northern distillery, Hepple Spirits. Our gift boxes will be staying after Christmas too, so they really are the perfect gift for any occasion (or just a treat for yourself!)
Hepple Spirits Partnership
We are very excited to be partnering with Hepple Spirits this year for our new wooden gift boxes. Elise met the lovely Sophie, Sales Director for Hepple Spirits last year at the local Carruthers & Kent wine fair. Together they crafted the combination of our This Mortal Angel with Hepple’s Sloe and Hawthorn Gin which tasted divine – and a partnership was created to bring you the perfect Christmas cocktail for the festive season.
Bubble Bar's Advent Calendar
We are also very excited to announce our partnership with Cameron from another local business -The Bubble Bar. We’re super excited to be part of their first advent calendar, along with other local North East based distilleries. Make this December a merry one and countdown to the big day with a different award-winning miniature gin, vodka, liqueur, whiskey or rum each day – finishing on door 25 that reveals our sparkling wine to enjoy on the big day itself!
